About the distillery

Established in 2015, Spring Bay Distillery is an award-winning craft distillery on Tasmania’s pristine east coast.  We produce world class single malt whisky, gin and vodka, using the finest local and imported ingredients.  Spring Bay’s cool temperate coastal environment produces some of the world's finest seafood and cool climate wines. It's an idyllic place to make spirits and for the spirits to take on the briny characteristics of its home.

What is it like to run a whisky distillery?

Crafting whisky is a time-honoured tradition. Whisky takes time to mature and all our barrels are carefully selected from a range of Tasmanian cooperages.  We only use the finest Tasmanian barley when making our whisky.  The barrels are in various sizes and will take years to mature.  Our local rainwater is added to each bottle of Spring Bay, bringing a soft and delicate sweetness with a touch of sea salt.  We love what we do and every bottle of whisky goes through a rigorous tasting regime to ensure that it meets our high standards.  

What makes your whisky so special?

People describe our whisky as being very clean with a lovely mouth feel. Our Tasmanian made still is designed to make a very viscous spirit with a lovely mouth feel. The rainwater adds the unique influence of the distillery’s surroundings where the bush meets the sea. 

What whisky do you make?

We make single malt whisky in the Scottish tradition.  Our core range of whiskies are:

  • Single Malt Whisky matured in American Oak Bourbon barrels
  • Single Malt Whisky matured in French Oak Sherry barrels
  • Single Malt Whisky matured in French Oak Port Barrels.

We also do some limited edition whiskies, using Tasmanian wine barrels that are sourced from local Tasmanian wine makers.

Why do you like about having a stall at Salamanca Market?

We love being at Salamanca Market because it gives us the opportunity for more people to try our products. People are encouraged to visit the distillery to see where and how the whisky is made. By owning our own stall, we have developed great relationships with other stallholders.

What is your market best seller?

Our market best seller would be our Single Malt Bourbon whisky.  

On the nose, there are sweet vanilla notes, as well as crème brulee with fruity and herbaceous undertones. The palate starts with a bright and sweet opening, the flavours build across the palate to a rich, clean alcohol-driven crescendo, culminating in a big warm and comforting glow of spicy tannin hints and peach flesh. The finish is long and warm with the afterglow fading into semi-sweet caramel and lingering stone fruit tingles.  Our Bourbon cask whisky was named one of the top single malt whiskies in Australia by the Australian Financial Review.  It won gold this year at the World Whisky Awards in London and always sells out!
